Stuff I Made from a Box

Recently I posted about getting a half-share from Rawfully Organic. So maybe I don't know what all the greens are. (Is there an app for that?) I have been cooking up a storm and eating fruits and veggies. Despite being called Rawfully Organic, you don't have to be a raw foodist to enjoy.

First up: Baked Kale Chips
Easy enough. Shred the kale by hand and then sprinkle with olive oil, salt, and pepper. Bake at 275, stirring once or so to make sure it's evenly crisp, for about 20 minutes.
 I think that I used a bit too much oil, even though it was only a few teaspoons. 
Verdict: delicious! Kale has a sort of bitter goodness to it. A few people described it as tasting of broccoli. I can see the resemblance, but I found it subtly different. Lincoln ate two platefuls and said, "I love this!"

Next: Focaccia with Arugula
I mentioned my arugula obsession and then happened to catch a bit of Diners, Drive-ins, and Dives where Guy Fieri ate at some pizza place where they served a sort of white pizza with arugula on top. Maybe this sounds weird, but it's incredibly amazing! I can't even tell you.
I used the focaccia recipe I talked about here and brushed it with olive oil and garlic, plus salt and pepper. After it came out of the oven, I topped it with feta cheese and then arugula that I had squeezed lemon juice over. Seriously. I tried the arugula on top of pizza tonight, and that was also amazing. Who would have thought tossing a salad on top of pizza could be amazing? Not me. But it is.
